São Jose Anaerobic Red Honey
Krankies is super excited to roast and release this amazing coffee from producer Marcos Antonio de Freitas of Brazil. Marcos is passionate about innovative specialty production, and dedicated to sustainable growth. He uses organic fertilizer and powers much of the farm with solar energy. This Anaerobic Red Honey is harvested during peak season. Selected red cherries are fermented anaerobically and then pulped. Parchment and some remaining mucilage is laid on patios to dry with the green beans. The thicker layers of drying parchment facilitates additional fermentation. These involved techniques greatly improve cup quality, and produce a coffee that is jam packed full of juicy, fruity, complex flavors. Sao Jose is the perfect coffee to be sipping while enjoying some much needed Spring time weather!
